Job Description:
SUMMARYResponsible for all aspects of inventory control and
operational procedures across property. Protects company assets by
ensuring compliance with internal control procedures, SOP's, and
regulations.ESSENTIAL DUTIES AND RESPONSIBILITIES include the
following. Other duties may be assigned.Own internal accounting
controls and monthly inventory audit.Ensure compliance with
established internal control procedures by examining records,
reports, operating practices, and documentation.Assist department
managers in preparation and delivery of accurate monthly financial
statements.Analyze and support costing out menu items at all
F&B outlets.Establish and maintain a cost allocation transfer
system for food and beverage supplies to the various departments.
Summarize these transactions for each month end.Check cost of sales
in all F&B outlets and ensure that the amounts are within the
budget and match with the finance department.Prepare variance
analysis for F&B and communicate with relevant parties.Check
and verify discounts, complimentary sales in the POS systems.
Verify all staff meals and staff discounts.Check the menu pricing
in the system and ensure the correct prices are loaded.Act as
verification liaison between department managers and Accounts
Payable by auditing invoices received.Act as the first point of
contact and liaise with the Finance department in case of F&B
revenue and cost matters.Work with the F&B Management Team to
address and follow up on any discrepancies identified through the
audits. Coordinate with F&B management and finance to sort out
issues pertaining to F&B.Prepare weekly F&B Report (revenue
and cost) and recommend alternatives to improve costs. Distribute
to management.Continuously study weaknesses in F&B controls and
provide suggestions for improvements.Prepare financial forecasts
and assist managers in creating budgets for the F&B department,
considering sales projections, cost trends, and other relevant
factors.Provide financial analysis and reporting to support
strategic decision-making by F&B management.Train and mentor
F&B staff on financial procedures, controls, and reporting
requirements.Evaluate and negotiate contracts with vendors and
service providers to ensure favorable terms and conditions for the
organization.Support the development and implementation of pricing
strategies to maximize revenue and profitability.Prepare invoices
for submission to the accounting department.Log all new invoices
and price changes into the inventory management system.Review the
labor and payroll reports on a daily basis.Preparation of any
special reports, statements, etc., as requested.
